For the Dough:

- 2 large eggs
- 1 tbsp red food coloring
- 1 tsp vanilla extract

- 2 tbsp unsweetened cocoa powder
- 1 1/2 tsp ground cinnamon
- 1/4 cup unsalted butter, softened
For the Frosting:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 1/2 cups powdered sugar
- 2–3 tbsp heavy cream or milk
Instructions
- Prepare the Dough:
- In a large mixing bowl, combine flour, sugar, yeast, and salt.
- In another bowl, whisk together the warm milk, melted butter, eggs, red food coloring, and vanilla extract.
- Gradually add the wet ingredients to the dry, mixing until a dough forms.
- Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Make the Filling:
- In a small bowl, mix together sugar, cocoa powder, and cinnamon.
- Roll and Fill:
- Punch down the dough and roll it into a 12×16-inch rectangle.
- Spread softened butter evenly over the dough. Sprinkle the sugar, cocoa, and cinnamon mixture over the butter.
- Shape the Rolls:
- Starting from the long edge, tightly roll up the dough into a log. Slice into 12 equal pieces and arrange them in a greased 9×13-inch baking dish.
- Cover and let rise for another 30 minutes.
- Bake:
- Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 20–25 minutes or until lightly golden.
- Prepare the Frosting:
- Beat the softened cream cheese and butter together until creamy.
- Add vanilla extract and powdered sugar, mixing until smooth.
- Add heavy cream or milk, 1 tablespoon at a time, until the frosting reaches your desired consistency.
- Frost and Serve:
- Spread the frosting over the warm red velvet cinnamon rolls. Serve immediately for a soft, gooey treat!

- For a more vibrant red color, adjust the amount of food coloring as desired.
- Rolls can be prepared a day ahead and baked fresh in the morning.
