Description

These soft and chewy white chocolate key lime cookies are packed with citrusy flavor and creamy white chocolate. A perfect balance of sweet and tangy, they make a refreshing and delightful treat!

 


Ingredients

– 1 3/4 cups all-purpose flour

– 1/2 tsp baking soda

– 1/4 tsp salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1/4 cup brown sugar

– 1 egg

– 1 tbsp key lime zest

– 2 tbsp key lime juice

– 1 tsp vanilla extract

– 1 cup white chocolate chips


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a bowl, whisk together flour, baking soda, and salt. Set aside.

3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

4. Add the egg, key lime zest, key lime juice, and vanilla extract, mixing until well combined.

5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6. Fold in the white chocolate chips.

7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8. Bake for 10-12 minutes, or until the edges are lightly golden.

9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

– If key limes are unavailable, you can substitute regular lime juice and zest.

– For extra lime flavor, add an additional teaspoon of lime zest.

– Store cookies in an airtight container at room temperature for up to 5 days.

– These cookies also freeze well; just thaw at room temperature before serving.
